We are pleased to announce the Early Summer 2026 edition of the popular event "Japanese Sake Tripling Dinner," to be held at Bistro NOHGA, where guests can enjoy sake paired with an exclusively prepared multi-course meal and glassware.

This time, our collaboration features Takizawa Sake Brewery, founded in 1863 in Ogawa Town, Saitama Prefecture. Since relocating to its current site along the Nakasendo highway in Fukaya in 1900, the brewery has been defined by its iconic brick chimney, standing over 20 meters tall, as well as its steadfast commitment to traditional handcrafted brewing methods and its dedication to crafting local sake that reflects the character of the Fukaya region.

On the night of the event, you will enjoy a "tripling" experience featuring a selection of Takizawa Sake Brewery's finest sakes, including their signature Kikuizumi, described as "a sake of ancient tradition, as fragrant as chrysanthemums and as pure as a mountain spring," alongside delicate glassware designed specifically for sake by Kimoto Glass Tokyo, and the exquisite cuisine of Bistro NOHGA, crafted to bring out the very best of seasonal ingredients through close collaboration with local producers.

 ・ Cuisine: A special five-course Bistro NOHGA dinner paired with sake
 ・ Sake: Five selections from Takizawa Sake Brewery
 * A representative from Takizawa Sake Brewery will speak about their brewing philosophy, the unique qualities of their sakes, and recommended ways to enjoy them.
 ・ Glassware: Paired to complement each sake
 * Seiichi Kimoto of Kimoto Glass Tokyo will personally select the glassware to pair with each sake and share his insights on their features, key points, and how best to savor the sake with them.

Takizawa Sake Brewery remains devoted to traditional handcrafted brewing. Every step of the process relies on time-honored tools and the experience and intuition of the brewers. Koji-making is considered the most critical stage of sake production, and the quality of the koji is, in many ways, determined by what comes before it, the washing and steaming of the rice.

For ginjo-grade sake and above--made from rice polished to remove at least 40% of the grain and brewed at low temperatures to develop refined aromas--the rice is gently washed by hand. Steaming is carried out using traditional Japanese cauldrons and koshiki traditional steamers, which allow steam to pass through evenly for consistently reliable results. This careful attention to detail continues through the koji-making stage and into the brewing process itself, where handcraft remains paramount.

It is the brewers' hands that sense the state of the ingredients and fermentation, and make the subtle adjustments that matter. Modern machinery might well achieve something similar, but for us, handcrafting is something we hold dear.

Our hope is that our sake enriches the lives of those who drink it, deepening human connections and enhancing the pleasure of a good meal. It is our wish that everyone who encounters our sake, in any way, finds happiness through it.
