Introducing Our Original Craft Gin!

In collaboration with Ethical Spirits, a distillery based in Kuramae, Taito Ward, Bistro NOHGA has created its very own original craft gin: "Distiller's CUT TAITO Action with Bistro NOHGA."

Ethical Spirits, one of NOHGA Hotel Ueno's Neighbors, is a distillery startup that, as its name suggests, develops original craft gins using a diverse range of upcycled ingredients that might otherwise go to waste.
Sharing a deep appreciation for Ethical Spirits' sustainable philosophy, Bistro NOHGA turned its attention to the ginger pulp left over from the production of its house-made ginger syrup--a byproduct that had until then simply been thrown away. Driven by a desire to give new life to something once considered waste, we approached Ethical Spirits to explore the possibility of crafting a gin using this pulp. Their team embraced the idea wholeheartedly and proposed incorporating the ginger pulp as a botanical in the gin. From there, our collaborative creation was born.

The result, "Distiller's CUT TAITO Action with Bistro NOHGA," is an upcycled craft gin with a beautifully balanced character. The lively warmth of ginger and spice intertwines pleasantly with the fresh, green coolness of herbs, coming together in a subtly sweet gin that feels perfectly suited to the early summer season. A gently sweet cocktail combining our craft gin with house-made myoga (Japanese ginger) syrup. "Myoga" (冥加) is a word meaning unexpected happiness, blessings, or good fortune, and it is also the inspiration behind the hotel name "NOHGA." This cocktail is crafted with the wish that every sip brings our guests an unexpected moment of joy.

What is Distiller's CUT TAITO Action?

"Distiller's CUT" is a gin series that takes the "heads" and "tails" of the distillation process (the first and last portions that are typically discarded during standard gin production) and repurposes them as a base spirit, adding new botanicals before redistilling to create something entirely new. The name refers to the key decision made during distillation known as "the cut," and the series was born from a desire to find new value in the portions that were once simply set aside. Each release in the series offers a distinct flavor profile, and quantities are limited.

"Distiller's CUT TAITO Action" emerged as a community co-creation initiative rooted in Taito Ward, home to Ethical Spirits' Tokyo Riverside Distillery. "Distiller's CUT TAITO Action with Bistro NOHGA" marks the very first release in this series.

About the Label Design

The label features a visual of an artwork created by hotel members and guests using approximately 3,900 wine corks to commemorate the hotel's fifth anniversary, produced under the supervision of Tomonori Kubo of Atelier Cork & Tip, an art gallery and wine bar in Taito Ward.

Atelier Cork & Tip's spirit of "transforming discarded corks into something of value" resonates deeply with Ethical Spirits' own philosophy: "Nothing is Meaningless." It is this shared ethos that made the artwork the perfect symbol for this product.
